The grapes are thinned out in mid-June, harvested by hand in the first ten days of September and immediately cooled to 5° C. The following day , soft pressing of the grapes with subsequent cryomaceration.
Fermentation in steel at a controlled temperature for 7/10 days.
Maturation on the noble lees for 7 months with periodic bâtonnage, followed by draught, second fermentation and aging on the lees in the bottle for at least 18 months. Mechanical execution of the riddling and disgorgement with the addition of the liqueur d’expedition.
Sparkling wine of a bright coppery pink color, with a fine, dynamic and persistent perlage.
On the nose, the bouquet is intense and complex: sensations of bread crust and hints of dried fruit immediately emerge, followed by fruity notes of small red fruits such as raspberry, strawberry, red currant and citrus pink grapefruit. On the palate you can find the olfactory perceptions and the wine is fresh, savory, with excellent persistence and enveloping effervescence.
Incanto is perfect as an aperitif, but it can also accompany dishes such as lasagna, gramigna with sausage, cured meats, zampone and lentils, pork tenderloin with mustard, duck breast lacquered with honey, mullet in stew.
