Soil characteristics: predominantly clayey.
The grapes harvested in the first decade of September and immediately cooled to 5°C.
The following day, follows temperature-controlled soft pressing of the grapes with subsequent cryomaceration.
Fermentation in stainless steel at controlled temperature for 7/10 days. Maturation on lees for 3 months with weekly bâtonnage. Foaming and end of fermentation in tanks (autoclave).
Brilliant cherry pink sparkling wine with a fine, persistent and silky perlage.
On the nose, its bouquet is intense and complex with notes of red fruits, slightly citrusy, which are also found in the mouth, where it is fresh, savory, persistent and with a marked acidity, that pleasantly recalls the drink.
A versatile, gastronomic wine, excellent as an aperitif, with light and delicate fish or white meat dishes, vegetarian dishes and cured meats from the Emilian territory.
